This recipe is the most simple and quick recipe in the books, and a perfect meal for a quick weekday dinner. In addition to that, you are free to choose your type of noodles, veggies and protein, no matter what you choose it will be delicious. For this dish, I would recommend going with either egg noodles or rice noodles, and either beef, chicken or salmon for your choice of protein.
This time I decided to go with beef and rice noodles. To add some extra flavor, I cooked the beef in teriyaki, added some sweet chili sauce to the vegetables, and sesame oil and soy sauce to the rice noodles. Wow, these flavors combined are truly appetizing; especially if you are fond of Asian food.
Do not think you have to go to the grocery store for this recipe, take whatever you have at home and start cooking. You can even substitute the noodles with rice or if you want to be really healthy, skip the noodles or rice and aim for a colorful plate with tons of vegetables.
Ingredients:
Beef/salmon/chicken
Noodles
Broccoli
Carrots
Avocado
Scallions
Spinach
Soy sauce
Sesame oil
Teriyaki sauce
Sweet chili sauce
Salt & Pepper
Sesame seeds
Cooking instructions:
1. Fill a pot with water, bring to a boil and cook the noodles as instructed on the package.
2. Cut the broccoli and carrots and place in a pan. Add some olive oil, salt and pepper and cook on medium heat until soft. When soft, add spinach, sweet chili sauce and avocado, and cook for another 2 minutes.
3. If you chose beef or chicken, cook in butter, salt and pepper. When cooked, add teriyaki sauce and continue to cook for another minute or two. If you decided to go with salmon, place it in the oven and pour some teriyaki over it. Cook for approximately 15-20 minutes under 430 degrees.
4. When your noodles are done, place them into the pan containing the vegetables. Then, add one teaspoon of sesame oil and soy sauce (be generous with the soy sauce, you do not want it to be dry). Then, stir.
5. Either cut your beef, chicken or salmon and place it on top or mix it in with the noodles and vegetables. Or, you can keep it as it is and have on the side.
6. Garnish the dish with some scallions and sesame seeds.
Enjoy!
